No- that is not correct. We would say "Not today, how about another day" which is not completely grammatical as it omits the verbs, but is what an English speaker would say. In your sentence "today is not OK" is a correct phrase but the second part "another day" is incomplete.

Thanks, but I am busy today. Perhaps another day?

Nothing really incorrect, just not what people say. There are lots of other ways. Possibly most common would be "Can't make it today, maybe some other time" but that sounds a little unenthusiastic so you might want to change the second part to "but I'd love to some other time" or "but I definitely want to some other time" or even "can you make it some other time?" or "how about Wednesday?" or whatever.

I might say: "Sorry, I cannot today, let's try for another day".

Certainly the word "change" would not come into the conversation.

I would say "I can't today, another day though!".
